(Makes 4 to 6 dozen)
½ lb. sharp cheddar cheese, grated
½ lb. butter or margarine, softened
½ tsp. salt
1½ cups all-purpose flour, sifted
Heavy pinch of cayenne pepper
Pecan halves or almond slivers (optional)
Cream together cheese, butter, salt and cayenne pepper.
Add flour and mix into dough.
Form into a roll, wrap in waxed paper and refrigerate. It will keep for a month.
When needed, slice into thin wafers (1/4-inch thick) and bake on an ungreased cookie sheet in a preheated 350 degree oven for 12 to 15 minutes.
If desired, press a pecan half or almond sliver lightly into each wafer before baking.
Great with cock tails or wine during any season.
