Last Saturday, Sep. 26, was the soft opening for Los Rubios Taco Shop at 340 Falcon Ridge Parkway, Building 400, Suite #402, right next to Mesquite Dermatology. The location was that of Breadenstuffers which closed a couple of years ago.
Now with new life in it, the owners,Maria and Angel Acosta are fulfilling a lifelong dream of owning their own restaurant.
The Acostas moved to Mesquite four years ago from St. George and have worked in other area restaurants during that time.
“We have three boys, and at first we didn’t think much of Mesquite because we’d have to go to St. George or Las Vegas to get what we needed,” said Maria. “But when we moved here, we found how great the community is and decided to stay. We love it here.”
Maria cited how her children have improved academically in the local schools since the move and how much safer it is here being a smaller city. “This is a good community,” she said. “There are a lot of nice people here.”
Los Rubios Taco Shop is planning on keeping their established hours of 7 a.m. to 10 p.m. seven days a week, only closing for Thanksgiving and Christmas. Glancing over their menu will set them apart from other places in Mesquite as there are no items listed that cost more than $8. On another note, Maria said that the City has been amazing in helping them open up, stating that they received all of their licenses, inspections and permits to be open within a month, possibly setting a new record for opening a brick and mortar business in Mesquite. They will also be having a grand opening in mid-October when more of the snowbirds return for their winter stay.

That said,all this town and littman attract are dollar stores and taco shops.
The city only throws roadblocks on anything subtansial .
