GREEK CHICKEN
INGREDIENTS:
Chicken Pieces of your choice, chicken halves, breasts, legs, thighs, etc.
3 Lemons, divided
½ cup Olive oil
2 Tbs. Crushed Black Pepper
3 Garlic Cloves
2 Tbs. Dried Oregano
2 Tbs. Dried Summer Savory
1 Tbs. Rosemary
Salt To taste
PREPARATION:
Preheat oven to 350 degrees F.
Squeeze juice from two lemons into a small bowl and add the garlic, oregano, savory and rosemary. Stir vigorously; then add olive oil and stir again until fairly well blended.
Lay chicken in baking dish or dishes and pour mixture over the chicken and rub well all over into the chicken.
Place chicken in preheated oven and bake until done, approximately 45 minutes.
Cut the one remaining lemon into wedges. Sprinkle chicken with salt and serve with the lemon wedges.
Note: Goes good with sourdough bread, fried potatoes and dry white wine.
