(Serves 6)
INGREDIENTS:
1 cup mayonnaise
1 cup cheddar cheese, shredded
1 cup Monterey jack cheese, shredded
1 medium onion, thinly sliced
1 cup dry white wine
1½ lbs. halibut, skinned, cubed and patted dry
DIRECTIONS:
In a medium bowl, mix the mayonnaise and both cheeses together. Set aside.
In a lightly oiled 8- x 8-inch baking dish, spread the sliced onion, then layer the halibut over the onion. Pour the wine over the halibut and let rest in the refrigerator for 1 hour.
Pour off the majority of the liquid, then spread the cheeses and mayonnaise mixture over the onions and halibut.
Bake for 30 minutes or until the halibut flakes when tested with a fork. Serve over rice.
NOTE: Recipe works well with any firm white fish.

I cook this delicious recipe in a 375 degree oven. I also cover it while it’s cooking.
